Halen Mon Oak Smoked Sausage Casserole

At Cottage Foods we are absolutely in love with Halen Mon's Oak Smoked water. The taste of the water alone takes us back to trips around the deep south of america, BBQ joints, camping trips and all the fine carefree elements of life. 

Heres our take on a winter classic, which is sure to put bums on seats at the table and definitely a call for seconds! 

Ingredients:

1 tbsp olive oil
1 onion, finely chopped
1 black garlic clove, crushed
1 large celery stick, finely chopped
2 red peppers cut into chunks
6 Cottage Foods Elite Sausages
1 tsp Triple Lion Smoked Paprika
½ tsp Triple Lion Cumin
½ tsp Triple Lion Chilli Flakes
800g tinned chopped tomatoes
400g can cannelloni beans, drained
250g Spinach
1 pipet of Halen Mon Oak Smoked Water 
Halen Mon Smoked Salt to taste 

Method: 


Put the oil in a large, heatproof casserole dish over a medium heat and add the onion, cooking for 5 mins until starting to soften. Tip in the black garlic, celery and peppers, and give everything a good stir. Cook for approx 5 mins more.

Turn the heat to high and add the sausages. Cook for a five minutes until browned all over, then reduce the heat to medium, sprinkle in the spices and season well. Pour over the tomatoes and bring to a simmer. At this point add in 1 pipet of Halen Mon Oak Smoked water. Cover and continue simmering gently for 40 mins, stirring every now and then.

Add the beans and spinach,  cook for a further 10 minutes and stir. Season with Halen Mon Smoked salt and serve with some crusty bread.....
