LGM or Lao Gan Ma chilli oil is a famous Chinese brand of chilli oil used throughout China. The jar feels like it contains more chillies than oil, filled to the brim with dried chillis, and the occasional peanut for extra flavour and texture.
Keep a small dish on the table as a condiment with almost any dish - a spoon in a bowl of ramen, or a little on top of silken tofu with sesame and soy for breakfast. The oil makes a great base for hot dipping sauces, served alongside won ton or prawn tempura.
